Faster Gretas Kakun - A soft flat bread from one of Gretas original recipes.
500 ml Water +
500 ml Milk or Processed Sour Milk
50 - 100g Melted Butter
1g Live Yeast
50 ml Light Syrup
1/2 Teaspoon Ammonium Carbonate
Dissolve the yeast in the liquid, add the melted butter, syrup and ammonium carbonate.
and stir until everything is mixed. Mix in flour until you get a very loose dough. Let the dough rise for about 40 minutes.
The dough will be very moist and need a lot of flour when you roll it, but that’s part of the charm with this recipe! Don’t work the dough too much. When you have the right shape (as the image to the left shows), use a fork to prick the dough thoroughly.
Bake directly on the stones at 300° and enjoy with a generous knob of butter!
